What to Make Next in Your College Kitchen (Featuring Trader Joe's)
Acai Bowl
Fresh acai bowls are the best way to start your morning. For this bowl, we used Trader Joe’s frozen strawberries, blueberries and bananas. We put shaved coconut and chia seeds on top for added nutrients and fiber. Top with fresh strawberries and granola as well! This pink acai bowl is our go-to morning breakfast as it’s delicious and gives you great energy!
Teriyaki Dinner
If you love teriyaki, this meal is for you. Drench your salmon in teriyaki sauce and make fresh rice pilaf and broccoli on the side. Using Trader Joe’s teriyaki sauce is a time-saving and tasty alternative to making your own. Salmon only takes about 10-15 minutes to cook, so you can have everything in this meal ready in less than 20 minutes!
Quesadilla
Quesadillas are a delicious, quick and easy dinner idea. All you need is cheese and tortillas to have a tasty meal ready at your fingertips. We love making fresh guacamole as a side with lime, salt and pepper. Another great snack idea is making a caprese salad. For this meal, buy fresh tomatoes and mozzarella and use Trader Joe’s balsamic glaze for delicious finish.
Avocado Toast
Trader Joe’s balsamic glaze is the best addition to any meal. Lately, we have been making fresh avocado toast on Ezekial bread with heirloom tomatoes, lemon pepper seasoning and balsamic glaze on top. This tasty meal takes only a couple of minutes to make and will keep you full for the day ahead.
Breakfast Burrito
Breakfast burritos are our newest obsession. We decided to put potatoes, beans, salsa, seasoning and cheese inside and toasted the outside until golden brown. We added hashbrowns on the side from Trader Joe’s with avocado and ketchup as dipping sides. Yum!
Green Goddess Salad
If you are in the market for a great dressing, then Green Goddess is the way to go. It has a fresh taste and has avocado, green onion, lemon juice, chives, basil and garlic. This blend of fresh herbs and avocado is refreshing and will taste amazing on any salad. We decided to make a salad of leftover hummus, vegetables and romaine lettuce, and it all came together with this dressing!
Oven-Roasted Veggies
Making oven-roasted vegetables for the week is always a great idea. Try to keep a bin of vegetables in your fridge so you can easily heat up for a snack or dinner. We used leftover vegetables, which included green beans, carrots, potatoes and peppers. It tasted delicious with fresh lemon pepper seasoning!
