Summer is in full swing, so it’s time to sit back and relax. With the warm weather comes lots of cookouts, picnics and beach days. Never know what to bring for food? Check out some of our favorite summer recipes below, and maybe you’ll find a new favorite meal! 

  

Berry Smoothie

Smoothie’s are perfect for summer, and make a great breakfast or snack! Try this refreshing berry smoothie with watermelon and coconut! 

Ingredients:

●      ½ cup coconut water

●      1 cup frozen berries

●      1 cup spinach

●      1 cup fresh seedless watermelon

●      ½ cup plain or vanilla flavored yogurt

Mediterranean Chopped Salad 

Everyone loves a good summer salad, and this is definitely a fan favorite! Of course, feel free to make it your own and add any other ingredients you would like. Once the salad is all chopped and ready, serve it with pita bread like a little wrap!

Ingredients:

●      1 small head romaine lettuce, chopped

●      1 can of chickpeas, drained and rinsed

●      1 tomato, diced

●      1 small cucumber, diced

●      1 small red pepper, diced

●      1/2 small red onion, diced

●      3/4 cup chopped Kalamata olives

●      3/4 cup feta crumbles

●      2 tablespoons chopped fresh dill

●      Pita bread, for serving

Dressing:

●      1/4 cup olive oil

●      2 tablespoons red wine vinegar

●      1/2 teaspoon dried Italian seasoning

●      1/2 teaspoon salt

●      1/4 teaspoon black pepper

Watermelon & Feta Salad

This watermelon salad recipe is SO easy to make and absolutely delicious. Just chop up a few ingredients,  throw them together and you have this refreshing salad! Perfect for summer cookouts or trips to the beach. Make sure the watermelon is perfectly ripe, that is the key! Feel free to add any other toppings you like to spice up the recipe. 

Ingredients: 

●   Watermelon 

●   Feta Cheese Crumbles 

●   Cucumbers 

●   Fresh Basil 

●   Lemon

Coconut Chia Pudding 

With your ingredients ready to go, this recipe is super quick and easy. Prep the night before and stick in the fridge overnight to be ready in the morning. This pudding is delicious and packed with protein to keep you full for longer. Customize it with fresh fruit, granola, or chocolate chips on top! 

●      1/3 cup whole chia seeds

●      2 cups (1 15-ounce can) coconut milk

●      2 tablespoons honey

●      optional toppings: fruit, granola or chocolate chips
