Crockpot Baked Apples
By: Meredith Taylor Autumn is arriving: the air is becoming crisp and cool, the sun sinks earlier in the evening sky and greets us with warm, glowing sunsets. It’s my favorite season filled with nostalgia, family, earthy recipes and hearty appetites.I am as content as the temperatures are amicable. As the leaves curl on the brink of changing to their beautiful golden hues, my mind wanders to one of my peaceful places, the kitchen.
I love the freedom the kitchen brings me. I am never one to follow a strict recipe, for I find discovery is my best tool. Just as the leaves fall without course creating an unplanned beautiful landscape, I too let my creativity flow uncharted in my cooking.
Fall on a plate: Sweet Honeycrisp apples are cored and stuffed with a chewy, sweet center that wraps you in the arms of the fall season. As they slowly wilt in their crockpot, sweet and spicy juices slowly drip down the sides. The skin peels away from the outer shell revealing soft, translucent apples. Slicing down the center, a golden, crunchy surprise will have you licking your fingers.
This sweet snack is a simple spin to satisfy your apple pie craving as an early morning breakfast or late night dessert with a dollop of vanilla ice cream. With just four ingredients, it’s a foolproof bite even the least cuisine-competent will be able to tackle.Pop the apples into the crockpot and let them slow-cook all day while you are out and about searching for the perfect pumpkin. The warm aroma of molten sugar will fill your home and make you want to curl up and watch the leaves swirl in the gentle gusts outside your window.
Crockpot Baked Apples
Serves 3
3 hour cooking time
3 fresh Honeycrisp apples
Old-fashioned oats
Brown sugar
Cinnamon
Water to fill just the bottom of the crockpot
- Pit apples and fill just the bottom of the crockpot with water.
- Combine oats, brown sugar and cinnamon.
- Spoon the dry mixture into each apple.
- Place apples in the crockpot and cook for 3 hours.
- Serve - vanilla ice cream optional!
