I Went to Elon Dining’s Earth Day Festival and Here’s What I Saw

For Earth Day 2021 Elon Dining put on a beautiful display along the rim of Lake Mary Nell from Ionic Plaza to Phoenix Drive on April 22nd. The night was filled with food, live music, and A COW. You’re eyes are not fooling you, students got to pet and take photos with two baby cows. 

Local food tents were strung from Iconic Plaza to Phoenix Drive and featured SUCH yummy food. Some of the food that was featured was from Tribucha Kombucha, Barbecue, and Ran-Lew Dairy Milk Company! The event also featured live music from one of our own Eliza Spear, all for a meal swipe!

Here’s the scoop ... Lakeside and McEwen were closed for lunch and dinner for this event left many confused but pleasantly surprised by the alternative!

The event featured compostable packaging which added to the earth day message. Trays were give out to students so that they could go to multiple stations!

Bibimbap 

Paige Czarnik (24), “The sauce is tangy and the kimchi gave it a really nice kick.The rice was also really good, but the seaweed was not it. I’m not sure why an entire egg was in it, this made it a little hard to eat on the go.” 

In this dish: Local Tidewater Grain Co. rice, eggs from Latta’s Egg Ranch, kimchi, seaweed, carrots, spicy sauce, snap peas

Pork Bao Buns

Kailey Casl (24), “I had the Pork Bao Buns and it was really great, the meat was so juicy that I went in line for a second!” 

In this dish: Pork shoulder from Joyce farms, radish from cottle organics cilantro from sweet pea urban gardens

Blackended Hot honey Chicken Taco with Crispy Chow Chow 

Kailey Casl, “Honestly this was a miss, the chicken was whole on the taco which made it really hard to eat! I ended up throwing it out because of how hard to was to eat on the go.”

Charcuterie Cones

Lindsay Gelman (23), “I LOVE charcuterie board and this made me so excited! I thought the cones were really innovative as i have never heard of them before this event!

Featured in a cone, this dish was a nice ending. Sweet strawberries with cream and cake at the bottom.
